I was shopping in Target today and saw the book, When in Doubt, Add Butter by Beth Harbison. (P.S. You can hear a preview of the book here! ) I had to laugh because that is completely my philosophy too. You can bet any recipe that combines real sweet cream butter with powdered sugar and then rolled in plain sugar is going to be delicious.
I love little butter mints and remember them in light pink and mint green rosettes at all the showers when I was a young girl. They are a staple at a traditional Southern wedding shower. Here is my recipe for how to create these classic butter mints.
Preparation Time: 15 minutes
Difficulty: Easy
Ingredients:
1/2 cup butter
7 cups of confectioner's or powdered sugar
1 Tablespoon of milk
1/2 teaspoon of peppermint extract
1 cup of sugar
Step 1: Allow the butter to soften at room temperature.
Step 2: Combine confectioner's sugar, butter, milk, and peppermint extract in a bowl and mix until it forms a crumbly mixture that holds its shape. (Add food coloring at this point if desired)
Step 3. Roll into small balls, dip in a bowl of sugar, and press into your mould. Place on wax paper and store in an airtight container.
I used these silicone moulds from Martha Stewart to create to zinnias!
